INGREDIENTS

METHOD
- Boil lobster tails in water at 212°F (100°C) for 5-7 minutes until shells turn bright red. Remove meat and set aside.
- In a large pot, melt butter over medium heat. Add onion, celery, thyme, and tarragon. Cook until vegetables are soft and translucent (about 10 minutes).
- Add garlic and tomato paste, stir for 1 minute until fragrant.
- Pour in wine, let it reduce by half (about 5 minutes).
- Add seafood stock, bring to simmer. Cook for 20 minutes until vegetables are very tender.
- Blend until smooth using an immersion blender or transfer carefully to a regular blender.
- Stir in heavy cream and chopped lobster meat. Heat through gently.
