Ingredients:

- 1 large egg (or 2 egg whites)
- 1 cup almond flour (96g)
- ½ cup freshly grated Parmesan (50g)

- ½ tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and pepper to taste

Method:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Cut zucchinis into even sticks (about 3 inches long, ½ inch thick).
- Critical Step: Pat zucchini sticks thoroughly dry with paper towels.
- In first shallow bowl, beat egg until smooth.
- In second bowl, combine almond flour, Parmesan, and all seasonings.
- Dip each zucchini stick in egg, then coat with almond flour mixture.
- Arrange on baking sheet, leaving space between each fry.
- Bake for 15 minutes, flip, then another 10-15 minutes until golden brown.
