METHOD
1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
2. For the sponge:
- Whip egg whites to soft peaks
- Mix dry ingredients in separate bowl
- Fold in melted butter and yolks
- Gently incorporate egg whites
- Spread on parchment
- Bake 18-22 minutes until golden
3. For the cream:
- Blend dairy until smooth
- Add sweetener and vanilla
- Whip until thick and creamy
- Chill until needed

4. Assembly:
- Quick-dip sponge pieces in coffee
- Layer in dish: sponge, cream
- Repeat layers
