INGREDIENTS:

METHOD:
- Preheat oven to 350°F (180°C)
- Combine mozzarella and cream cheese in microwave-safe bowl
Heat in 30-second intervals until fully melted - Mix almond flour, baking powder, and xanthan gum in separate bowl
- Add egg to cheese mixture while still hot, mix quickly
Work fast to prevent cheese hardening - Add dry ingredients to cheese mixture
Knead until smooth dough forms

- Roll dough between parchment sheets into 12×8 inch rectangle
- Brush with melted butter
Sprinkle with cinnamon-sweetener mixture - Roll tightly from long edge using parchment as guide
- Cut into 8 equal pieces
Place in greased pan

- Bake for 20-25 minutes until golden brown
