METHOD
1. Preheat oven to 325°F (165°C)
2. Prepare the crust:
- Mix almond flour, melted butter, allulose, and vanilla
- Press firmly into bottom of greased springform pan
- Bake for 10 minutes until lightly golden
- Cool completely

3. Make the filling:
- Beat cream cheese until completely smooth (no lumps)
- Add sweetener gradually, mixing well
- Add eggs one at a time, mixing on low
- Fold in sour cream, vanilla, and zest

4. Assemble and bake:
- Pour filling over cooled crust
- Place in water bath if using
- Bake at 300°F (150°C) for 70-80 minutes
- Center should still have slight jiggle

5. Cool properly:
- Turn off oven
- Crack door open
- Let cool 1 hour in oven
- Refrigerate minimum 4 hours
