Keto Shrimp and Cauliflower Grits

Ingredients:
For the Cauliflower Grits:- 1 large head cauliflower (3-4 cups florets)
- 2 cups chicken broth
- 4 oz cream cheese
- 1 cup sharp cheddar cheese, shredded
- 2 tbsp butter
- ½ tsp garlic powder
- Salt and pepper to taste
- 1 lb large shrimp, peeled and deveined
- 2 tbsp butter
- 2 cloves garlic, minced
- 1½ tsp Cajun seasoning
- ¼ cup heavy cream
- 3 green onions, chopped
- Fresh parsley (optional)
- Lemon wedges (optional)
Method:
- Break cauliflower into small florets and place in a saucepan with chicken broth. Bring to boil, then reduce to medium heat and cook for 12-15 minutes until very tender.
- Drain excess liquid, leaving about ¼ cup in the pan.
- Add cream cheese, cheddar, butter, garlic powder, salt, and pepper to cauliflower. Mash until smooth and creamy.
- In a separate skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds.
- Add shrimp and Cajun seasoning. Cook for 2-3 minutes per side until pink and curled.
- Pour in heavy cream, simmer for 1-2 minutes until slightly thickened.
- Serve shrimp over cauliflower grits, garnish with green onions.

- Don’t overcook the cauliflower – it should be tender but not mushy.
- Pat shrimp dry before cooking for better browning.
- Taste and adjust seasoning before serving – cauliflower needs more salt than regular grits.
