INGREDIENTS:
- 6 large eggs
- 1/3 cup (80ml) mayonnaise
- 1 tablespoon (15ml) Dijon mustard
- 2 tablespoons fresh dill, chopped
- 1/4 cup (60g) celery, finely diced
- 2 tablespoons (30g) scallions, thinly sliced
- Salt and pepper to taste
- 8-12 large butter lettuce leaves

- 1/2 avocado, sliced

METHOD:
- Preheat oven to 350°F/175°C
- Spray loaf pan with cooking spray and crack eggs directly into pan
- Place loaf pan in larger baking dish filled with 1 inch of hot water
- Bake for 30 minutes until eggs are fully set
- Cool eggs for 5 minutes
- Chop eggs into small, even pieces
- Mix eggs with mayonnaise, mustard, dill, celery, scallions, salt and pepper
- Wash and dry lettuce leaves thoroughly
- Spoon 2-3 tablespoons of egg mixture onto each leaf
- Roll leaves tightly, using foil to secure if needed
