METHOD:
- Pat oxtail pieces dry and season generously with salt and pepper
- Heat oil in Dutch oven over medium-high heat until shimmering
- Brown oxtail pieces in batches (3-4 minutes per side) until deep golden crust forms
- Remove oxtail, reduce heat to medium, sauté onions, carrots, celery (5-7 minutes)
- Add garlic, cook 1 minute until fragrant
- Pour in wine, scrape bottom to deglaze
- Add broth, tomato paste, herbs, return oxtail
- Bring to boil, reduce to very low simmer
- Cover and cook 2.5-3 hours (stovetop) or 7-8 hours (slow cooker) until meat falls off bone
