- Place quartered onions and minced garlic in the bottom of your slow cooker.
- Position the seasoned (and seared if choosing that option) roast on top of the onions.
- Pour beef broth around (not over) the meat.
- Add chopped celery and parsley.
- Cover and cook on LOW for 8-10 hours or HIGH for 4-6 hours.

- The roast is done when it easily shreds with a fork.
Crucial Tips
- Don’t lift the lid during cooking – each peek adds 20 minutes to cooking time.
- Ensure your roast is room temperature before cooking.
- For the most tender result, always choose the LOW setting.
- Pat meat dry before seasoning for better browning.
Storage & Variations
Storage:
- Refrigerate in an airtight container for up to 3 days.
- Freeze for up to 3 months.
Common Mistakes:
- Don’t skip the searing step if possible – it adds tremendous flavor.
- Avoid overcrowding the slow cooker.
- Don’t add too much liquid – the meat will release its own juices.
Variations:
Mississippi Style:
- Add 1 packet ranch seasoning
- 4-5 pepperoncini peppers
- 1 stick butter
Traditional Style:
- Add carrots and potatoes (non-keto)
- Use red wine instead of beef broth
- Add fresh rosemary and thyme

The key to perfect pot roast is patience – let the slow cooker do its magic without interference. Your reward will be fork-tender, flavorful meat that’s perfectly keto-friendly.
